Named for chef-turned-perfumer Lorenzo Pazzaglia’s signature pasta dish, Carbonara is a playful, spiced gourmand that has nothing to do with eggs or guanciale and everything to do with warmth and contrast. Launched in 2020, it opens with black and pink pepper, smoke, and coconut, moves through rum and davana, and settles into a base of cane sugar, bourbon vanilla, sandalwood, and oud. It’s proof the house doesn’t take itself too seriously, even while building a genuinely well-constructed spiced-sweet extrait.
